Smoky Tofu Summer Rolls with Sweet Spicy Peanut Dressing

Ingredients
- 150 g Extra firm tofu, drained
- 1 tbsp Cornflour
- 1/2 tbsp Sesame oil
- 1 tbsp Light soy sauce, reduced salt preferred
- 1/2 tsp Garlic powder
- 1/2 tsp Smoked paprika
- 50 g Rice vermicelli noodles
- 1 medium Carrot, thinly sliced
- 1/2 Red pepper, thinly sliced
- 1/3 Fresh cucumber, deseeded (optional) and thinly sliced
- 1-2 Spring onion, diced
- 1 handful Fresh basil, chopped
- 1 handful Coriander, chopped
- 6 Rice paper sheets
- 3 tbsp Smooth peanut butter
- 1 tbsp Light soy sauce, reduced salt preferred
- 2 tsp Sweet chilli sauce
- 1 tsp Rice vinegar
- 1 tsp Maple syrup, low sugar preferred
- 1/2 Thumb-sized ginger, minced
- 1 Garlic clove, minced
- 1/2 Lime juice

🌾 For a GF option, swap the soy sauce for tamari or a certified gluten-free soy sauce (the rice paper and noodles are already gluten free).
🫙 Storage: Best eaten fresh - rice paper turns chewy once chilled. If needed, wrap tightly in cling film and keep in the fridge for a few hours. Store the dressing separately in an airtight container in the fridge for up to 5 days.
❄️ Freezer: Not suitable once assembled. The cooked tofu freezes well on its own for up to 3 months.
💡 For a genuinely no-cook version, use pre-marinated tofu from the supermarket (any Asian-inspired flavour works). Swap in Thai basil or mint if you have it, and use this to clear out any bits of veg in the fridge.
