- 6 Sundried tomatoes, oil removed and diced
- 8 Green olives, pitted and diced
- 1/2 tbsp Dijon mustard
- 20 g Tahini
- 1/2 Lemon juice, juice of
- 230 g Cooked chickpeas, drained if canned
- 1 handful Fresh basil, chopped
- 2 tbsp Nutritional yeast
- 100 g Unsweetened Greek-style soya yoghurt
- 40 g Plant based mayonnaise
- 1/2 tsp Onion granules
- 1 Baby cucumber, sliced
- 1 handful Rocket, big
- — Pickled red onion, to taste
- 4 slices Seeded bread
- — Extra virgin olive oil
- — Salt
- — Black pepper

🌾 For a GF option use certified gluten-free seeded bread.
🫙 Storage: keep the chickpea mash and yoghurt sauce in separate airtight containers in the fridge for up to 3 days. Assemble just before eating so the bread doesn't go soggy.
❄️ Freezer: the chickpea mash freezes well for up to 1 month. Don't freeze the yoghurt sauce or assembled sandwich.
💡 Swap the seeded bread for a wrap if you fancy a change - it's just as good rolled up.
