Ingredients
For 4
- 350 g Aubergine, 1 medium, halved lengthways then cut into 2cm (1 inch) diagonal chunks
- 1/2 Red chilli, sliced, seeds removed for less heat
- 2 Garlic cloves, minced
- — Extra virgin olive oil
- 1 Brown onion, diced
- 4 Garlic cloves, diced
- 1/2 thumb-sized piece Ginger, minced
- 1/2 Red Chili, sliced, seeds removed for less heat
- 2 tsp Mild curry powder
- 1 tsp Ground turmeric
- 1 tsp Cumin seeds, or ground cumin
- 1 tsp Hot chilli powder
- 1 tsp Garam masala
- 1/2 tsp Ground coriander
- 1 tbsp Tomato paste
- 1 Bay leaf
- 400 g Chopped tomatoes, tinned
- 500 g Cooked brown lentils, ,drained and rinsed if canned
- 400 g Coconut milk, tinned
- 8 Dried apricots, diced
- 2 tbsp Nutritional yeast
- — Salt
- — Black pepper
- — Lemon, wedges
- — Fresh coriander
- — Basmati rice, and/or naan bread
- — Plant-based yoghurt or cream, to top
- — Sesame seeds, to decorate (optional)

🌾 For a GF option serve with rice rather than naan.
🫙 Storage: keep in an airtight container in the fridge for up to 4 days - the flavour deepens overnight.
❄️ Freezer: freezes well for up to 3 months. Thaw overnight in the fridge and reheat until piping hot throughout.
💡 The apricots and lentils together are the iron source in this dish - pair with the vitamin C in the lemon squeeze at the end to help your body absorb it more effectively.
