Ingredients
For 2
- 1 Red onion, diced
- 2 cloves Garlic, minced
- 1/2 tsp Hot chilli powder
- 1/2 tsp Smoked paprika
- 1 tsp Dried oregano
- 1/4 tsp Ground cumin
- 1/4 tsp Cayenne pepper
- 1/2 tbsp Tomato paste
- 400 ml Polpa, finely chopped tinned tomatoes
- 400 g Cooked black beans, drained and rinsed if tinned
- — Extra virgin olive oil
- — Salt
- — Black pepper
- 1/2 Ripe avocado
- 1 tsp Miso paste
- 1/2 Lemon, juiced
- 100 g Edamame
- 3 tbsp Nutritional yeast
- 1–2 slices Jarred jalapeños, adjust to taste
- 170 g Lightly salted tortilla chips
- 1/2 batch Cashew queso , (minus the chilli oil)
- — Pickled red onions, to serve
- 1 handful Fresh coriander, to serve
- 1 tbsp Hemp seeds, to serve
