- 1 Carrot, diced
- 1 Celery stick, diced
- 1 Onion, diced
- 2 cloves Garlic, diced
- 1 tbsp Tomato paste
- 4 Sundried tomatoes, diced
- 220 g Tempeh, crumbled or quickly blitzed
- 400 g Tinned tomatoes
- 350 ml Vegetable stock
- 1 tbsp Soy sauce, low sodium preferred
- 240 g Cooked brown lentils, drained and rinsed
- 5 Dry eggless lasagna sheets, roughly broken into chunks

- ~4 tbsp Cashew queso (minus the chilli oil)
- ~2 tbsp Plant based basil pesto
