Ingredients
- 2 tbsp Extra virgin olive oil
- 1 Lemon juice
- 2 tbsp Nutritional yeast
- 1 tsp Dried oregano
- 1 tsp Garlic granules
- 1 pinch Salt
- 350 g Medium firm tofu, sliced into 1cm slices
- 4 tbsp Maple syrup, reduced sugar preferred
- 2 tsp Gochujang sauce
- 1/2 tsp Chilli flakes
- 100 g Edamame, thawed
- 1 Avocado
- 120 g Greek-style yogurt
- 1 handful Fresh mint leaves
- — Salt

- 4 Mini wraps
- — Rocket
- — Pomegranate seeds
- 1/2 Lime, cut into wedges

🌾 For a GF option, swap the mini wraps for your favourite certified gluten-free wraps and ensure your gochujang sauce is gluten-free.
🫙 Store the tofu halloumi and guacamole separately in the fridge for up to 2 days. Add the pomegranate, rocket, and lime fresh when serving.
❄️ The marinated tofu (before cooking) can be frozen for up to 3 months. Defrost overnight in the fridge and cook from fresh.
💡 For best results, marinate the tofu overnight — the longer it sits, the deeper the flavour.
💡 The edamame guacamole also works brilliantly as a dip or spread — make a double batch and keep it in the fridge for up to 2 days.
