- 250 g Extra firm tofu, drained and crumbled into bite-sized pieces
- 1 tbsp Cornstarch
- 1 tsp Toasted sesame oil
- 3 tbsp Reduced salt soy sauce
- 2 tbsp Maple syrup, reduced sugar preferred
- 1 tbsp Sriracha
- 1 clove Garlic, minced
- 1/2 thumb Fresh ginger, minced
- 1/4 lemon Lemon, juiced
- 1 White onion, diced
- 3 cloves Garlic, minced
- 1/2 thumb Fresh ginger, minced
- 1 Bay leaf
- 1 Green chilli, chopped, deseeded for less heat
- 1/2 tsp Cumin seeds
- 1/2 tsp Ground cinnamon
- 1/2 tsp Garam masala
- 20 g Fresh coriander
- 1 handful Fresh basil, small
- 1 handful Fresh mint, small
- 50 g Baby spinach
- 4 tbsp Nutritional yeast
- 250 ml Vegetable stock
- 100 ml Unsweetened soy milk
- 400 g Cooked butter beans, drained and rinsed if tinned

🌾 For a GF option, use tamari in place of soy sauce and serve with rice instead of sourdough.
🫙 The butter bean base keeps in the fridge for up to 3 days. Store the tofu bites separately.
❄️ The butter bean base can be frozen for up to 3 months. Defrost overnight in the fridge and reheat gently on the hob. Do not freeze the tofu bites.
