Ingredients

- 80 g British cucumber , finely sliced into half moons
- 1 1/2 tsp White rice vinegar
- 1/4 tsp Caster sugar
- 1/4 tsp Salt
- 2 tbsp Dark soy sauce
- 1 tbsp Hoisin sauce
- 1/2 tsp Maple syrup
- 1/2 tsp White rice vinegar
- 1 tbsp Sesame seeds, plus more for garnish
- 2 tbsp Water
- 3 cloves Garlic, minced
- 50 g Oyster mushrooms, torn
- 100 g Tempeh, crumbled
- — Toasted sesame oil, for cooking
- 300 g Udon noodles, precooked
- 300 g Silken tofu
- 1 tbsp Tahini
- 1/2 tbsp White miso paste
- 1 tsp White rice vinegar
- 100 ml Unsweetened soya milk
- 3 Ice cubes
- 2 tsp Chilli crisp oil

🌾 For a GF option, swap the udon for rice noodles and use a gluten-free dark soy sauce (or tamari)
🫙 Storage: keep the pickle, hoisin topping and soup base in separate airtight containers in the fridge for up to 2 days - assemble fresh
❄️ Freezer: the hoisin tempeh and mushrooms freeze well for up to 2 months. The soup base and pickle don't freeze well
💡 If the soup ends up thicker than you'd like, loosen with a splash more soya milk
